Fruit Kuzu Pudding
Lightly cooked fruit and vegetables are more digestible, and therefore, more nutritious than raw because we better absorb their nutrients. This pudding is great for digestion, especially if you have a constipation issue, and it is especially delicious when using fresh fruit in its season. The following recipe is just one example of this delightful, low-calorie dessert.
Peach Kuzu Pudding
Ingredients:
3 peaches, scrubbed well to remove fuzz, cut 1/2 lengthwise to remove pit, sliced thin lengthwise or diced as preferred
- 4 cups unrefined apple juice
- 1 tablespoon kuzu
- Pinch sea salt
- Optional - top pudding with chopped roasted almonds or walnuts
Directions:
Add peaches, apple juice and salt to pot, and begin to heat.
- Dissolve kuzu in a small amount of water and stir into pot. The juice will appear milky.
- Cook over medium heat, stirring constantly, but gently, until the juice clears and thickens. (The pudding itself will also thicken more as it cools.)
- Remove from heat, place in a bowl or individual serving bowls and top with nuts as desired.
- Can be served chilled if desired, but it is not necessary.
